3 Ways to Reinvent Classic Chocolate Chip Cookies

This month, the Scout Elves are remixing a Christmas Eve classic to create three fun new recipes for you and your family to try! Caramel Crunch Chocolate Chip Cookies

Caramel Crunch Chocolate Chip Cookies

You’ll Need:

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cornstarch
  • ½ teaspoon salt
  • 14 tablespoons (1¾ sticks) unsalted butter
  • 1 cup brown sugar
  • ½ cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup toffee pieces
  • 1 cup chewy baking caramels, cut into small pieces
  • 1 cup chocolate crunch bar
  • ½ cup semi-sweet chocolate chips
  • Parchment paper

Instrutions:

  1. Preheat the oven to 350 degrees, and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, cornstarch and salt. Set aside.
  3. In a separate bowl, beat the sugar, brown sugar and butter together.
  4. Add in the eggs and vanilla extract, and beat until combined.
  5. Pour in the dry ingredients, and mix until a dough forms.
  6. Fold in toffee pieces, caramels, crunch bar and chocolate chips.
  7. Roll 1 ½ tablespoons of dough into a ball, and place on the parchment paper–lined baking sheet.
  8. Bake for 10–12 minutes. Helpful hint: Cookies will spread due to the caramel in the dough.
  9. (Optional) To add a caramel drizzle to the cookies, use a double boiler method. Take approximately 15 caramels and combine with milk in a small pan. Place the pan over another pan filled with boiling water. Constantly stir the caramel until runny. Use a spoon to drizzle the caramel on top of the cooled cookies.
  10. Take a bite out of your chocolatey and crunchy creations!

Mighty Mint Chocolate Chip

You’ll Need:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup butter or margarine (softened)
  • 1 ¼ cup sugar
  • ½ teaspoon peppermint extract
  • 2 eggs
  • 6 to 8 drops green food coloring
  • 2 cups crème de menthe candies (cut into small pieces)
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, beat the butter and sugar together until light and fluffy.
  3. Next, add in the eggs, peppermint extract and food coloring. Helpful hint: Six to eight drops will give the cookies the perfect minty color!
  4. In another bowl, combine the flour, baking soda and salt.
  5. Add the dry ingredients to the wet ingredients, and beat until a dough has formed.
  6. Fold in the crème de menthe candies and chocolate chips.
  7. Place small balls of dough (about 2 inches wide) onto the cookie sheet.
  8. Bake for about 8-10 minutes or until you notice the cookies browning on the edges.
  9. Let the cookies cool, and then, dig in!

Rich Red Velvet Chocolate Chip

You’ll Need:

  • 1 ¾ cup all-purpose flour
  • ¼ cup unsweetened baking cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter, softened
  • ½ cup sugar
  • ½ cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 2 tablespoons milk
  • 2 teaspoons red food coloring
  • 1 cup white chocolate chips

Instructions:

  1. In a large bowl, whisk together the flour, cocoa powder, baking soda and salt.
  2. Use a mixer to beat the butter until creamy (approximately 1 minute).
  3. Add in the sugar and brown sugar and beat until creamy (approximately 1 minute).
  4. Beat in the egg, milk, vanilla extract and food coloring. Helpful hint: Add more food coloring for even richer colored cookies.
  5. Pour the dry ingredients into the wet ingredients, and mix on low until soft dough is formed. Helpful hint: The dough will be sticky.
  6. Fold in the chocolate chips.
  7. Chill the dough for about an hour.
  8. Preheat oven to 350 degrees.
  9. Roll 1 ½ tablespoons of dough into a ball, and place on a baking sheet. Bake for 10–12 minutes.
  10. Let the cookies cool before enjoying these rich red velvet treats!
